This crop was treated by anaerobic drying; In the first step, the crop is floated and separated by density before being placed on the raised beds, where the ripe and unripe coffee cherries are sifted out; Then it is collected again and stored in plastic bags of 20 grams in a cool and dry place at a temperature between 18 and 22 degrees Celsius for seven days, then it is put back on the beds to dry for a period of 23 days under the covers to protect it from sunlight and rain water.
